Mad for Muffins: 70 Amazing Recipes from Savory to Sweet by Jean Anderson
I recommend Mad for Muffins by Jean Anderson. The author grew up learning the secret to muffin making from her mother: mix all dry ingredients in one bowl, mix all wet ingredients in another bowl and barely combine the two until you have a nice lumpy mix that will magically make "fine and feathery" muffins.
Most of these 70 muffin recipes call for lower amounts of sugar but there are a few gooey dessert muffins as well, such as my favorite, Chocolate Party Muffins made with chocolate chips. And then there are the sugary toppings such as Streusel, Maple Butter, and Lemon Curd that will make an ordinary muffin special.
Recipes range from Italian (Pepperoni Muffins with Sun-Dried Tomatoes) to Mexican (Peppery Pico de Gallo Corn Muffins) to down home flavors (Corn Muffins with Country Sausage) to the whimsical (PB & J Muffins). Try this book and you will see how easey it is to make delicious and simple-to-make muffins.
